Preface

The Governors’ Foundation of the Food Research and Development Centre (FRDC) is a not-for-profit organization established in 1991–92 by federal letters patent. It is very active in the biofood sector in Quebec and the rest of Canada. Its activities complement those of the FRDC, supporting the objectives of its mission, to increase knowledge of food processing and preservation systems. The Foundation’s highest-profile activities are transferring knowledge and seeking information for corporate and individual clients, but it is known for its awards, grants and annual dinner, as well. It also supports the publication of scientific and technical books and manuals intended for a variety of target audiences.

In publishing the proceedings of the Montréal International Symposium on Probiotics and Health: The Intestinal Microflora, held October 13, 2000, the Governors’ Foundation continues its work of communication and technology transfer. The proceedings will circulate widely, as they will be sent to the 180 people who attended the symposium. They will also be available to interested buyers and distributed in many French-speaking countries thanks to financial support from the “Agence intergouvernementale de la francophonie.”

The published proceedings are an important vehicle for transferring knowledge to all those interested in the contribution of foods to consumer health and well-being. They provide invaluable information from recognized authorities around the world in a variety of fields of expertise.

The international symposium on probiotics was the first to be held in Canada. In response to the comments and suggestions we have received, another activity concerning probiotics is already being organized for 2002, and the Governors’ Foundation is proud to be taking an active part in the project.
